Chinese pancake with shrimp and zucchini 虾仁糊塌子

Easy to make. And you can use ground beef or ground pork instead of shrimp.
简单有营养,可用牛肉末或猪肉末代替虾仁。


Ingredients: 2 egg, 2 small zucchinis, 2 green onion very well chopped, 1/4 cup cooked shrimp, a pinch of five spice powder, 1/6 tsp ground Szechuan peppercorn (or use ground black pepper instead), salt (a bit more than 1/2 tsp kosher salt),  black sesame seeds, flour (about 1/2 cup), oil
食材:2个鸡蛋,2个小西葫芦,2颗香葱切碎,1/4杯熟虾仁,1小撮五香粉,1/6茶匙花椒粉(或者用黑胡椒代替),盐(比1/2茶匙略多的kusher 盐),黑芝麻适量,面粉(大约半杯),食用油。


Instructions 步骤:
1: Chop shrimp very well. Chop off both ends of zucchini and shred zucchini. Add chopped shrimp, shredded zucchini, sesame, salt, five spice powder, egg, ground peppercorn into a big bowl. Mix well and set aside for 10mins to let zucchini liquid come out. And add some chili powder if you love spicy taste.
1:虾仁剁成泥。西葫芦去两头后刷成丝。将虾仁泥,碎西葫芦,黑芝麻,盐,五香粉,鸡蛋,花椒粉加入大碗中。混合均匀后放置10分钟让西葫芦出水。喜辣的亲们自动加辣椒粉哈。




2: There is liquid in the bowl already. Add flour into the bowl without adding more water expect if it's too dry. Mix everything together. Make sure the mixing paste is not too dry, just a bit trier than yogurt (see the picture).
2:西葫芦出水后,加入面粉,无需再另外加水除非太干。 混合均匀后一定注意面糊不要太干,比我们吃的酸奶稍干一点就行。(参考照片)。



3:Add a bit oil in a pan. 3 tbsp of paste for one pancake. Cook both sides until it's a little bit brown.
3:锅中热油。3汤匙面糊做一张小锅贴。两面煎至微微黄就可以啦。

Potato stew with pork 红烧土豆

This is the best simple version potato stew, very rich taste without any butter. The pork I use in this dish is boneless pork ribs. The stew juice goes very well with any kind of rice. I kind of made this in a short and there is no decorating pieces for good picture, but 100% guarantee good taste. The following ingredients is for 2-3 servings.
这道菜被我暗自称颂为“最简单美味的红烧土豆”。味道浓郁并且香糯,没有任何奶油或者黄油哦。 这道菜里的猪肉我用的是排骨剔下来的骨头肉,不肥不腻。这道菜我做得比较匆忙,没什么装饰食材来装饰照片,但是绝对保证百分百美味哦。红烧土豆的汤汁与米饭混合是十分下饭的哦。下面的食材是2-3人份的哦。


Ingredients: 5 potatoes (white or gold or small new potatoes, not the kind with red skin),  1 thai or 1mexican red chili finely chopped (optional), water, 1 cup diced boneless pork ribs, 3-4 slice ginger, 1.5 tbsp oil, 1.5 tbsp Szechuan bean paste chili (optional, but add extra 0.5tbsp soy sauce if you don't use this paste chili), 1tsp Siracha sauce, 3tbsp soy sauce, 3tbsp cooking wine, 1/8 tsp sea salt, 1tsp sugar, 1 bay leaf, a pinch of Chinese five spice powder
食材:5个土豆(黄皮或白皮土豆或新小土豆,不要用红色皮),1颗小红米椒切碎,水,1杯切丁猪肉,3-4片姜,1.5汤匙油,1.5汤匙四川豆瓣酱(或者用其它辣酱),1茶匙越南siracha 辣酱,3汤匙酱油,3汤匙米酒,1/8茶匙盐,1茶匙白糖,1片香叶(肉桂叶),1小撮五香粉



Instructions 步骤:
1: Clean the potatoes, chopped to any kind of chunk you like and soak in the water. 
1:土豆洗净后,切成块状泡入水中。


2: Heat up the oil on low. Add Szechuan bean chili stirring for 5 seconds . Turn the heat to medium-high. Add ginger, fresh chopped chili, pork stirring for 40 seconds. 
2:低温热油,炒香豆瓣酱。调至中火,加入姜片,碎辣椒和猪肉翻炒40秒。




3: Add potatoes, soy sauce, cooking wine, bay leaf, sugar, salt, Siracha sauce, five spice powder and stir for 2mins. Add enough water to totally cover the potatoes. Cook with the lid on for 12mins after it's boiling. Take off the lid and cook until there is only liquid left.
3:加入土豆,酱油,米酒,香叶,糖,盐,越南siracha辣酱和五香粉。翻炒2分钟后加入足够没过土豆的水。加盖煮,水开后加盖煮12分钟。去掉锅盖煮至汁水浓缩。

Fresh celery with ground beef 西芹牛肉末

15mins maximum to finish. Health and fast food after a tired work day.  Mixed with rice or noodles, any creative way you like would not go wrong on this dish. The following ingredients are 2 peoples serving size. In this dish I used Szechuan chili bean paste to bring the spicy flavor and of course you can use other spicy sauce like Siracha sauce to replace mine.

最多15分钟就能搞定的快捷菜。绝对是一天疲劳工作后的方便健康餐。用来拌饭吃,或者和着面条吃各种混搭都不会出错的万能款。下面的食材是2人份的量,请亲的们自己调节一下量。另外做这道菜我用的是“四川豆瓣酱”,如果你手头上没有也没太大关系,用普通辣酱代替就行。还有一点,用中国的旱芹(就是国内的普通细芹菜)味道更好哦。



Ingredients ( 2 serving size ): 0.6 LB ground beef, half bunch of celery, one egg, 2 tbsp soy sauce, 1/2 tbsp rice vinegar, 1.5 tbsp Szechuan chili bean paste (or other chili paste), 1/8 ground Szechuan peppercorn (or regular ground peppercorn), 1tbsp finely chopped ginger, 1 glove of garlic minced, 1 tbsp oil, 1/8 tsp sesame oil
食材(2人份):0.6磅牛肉糜(约500克),半捆西芹,1只鸡蛋,2汤匙酱油,1/2汤匙米醋,1.5汤匙四川豆瓣酱(或其它任何辣酱),1/8花椒粉(或胡椒粉),1汤匙碎姜,1瓣蒜切碎,1汤匙食用油,1/8茶匙芝麻油

Instructions 步骤:
1: Chop celery finely like the picture below. Add the egg to ground beef and mix very well.
1:将芹菜切碎切细,如下图。将鸡蛋打入牛肉糜中,混合均匀。



2: Heat up oil and sesame oil on medium for 10 seconds. Add ginger, garlic and chili paste very carefully into the oil and stir quickly for 30 seconds.  Watch out the splash oil. Add ground beef stirring until its all cooked.
2:中火热油10秒钟。非常小心地加入碎姜,蒜和豆瓣酱后快速翻炒30秒,小心溅油。再加入牛肉快速翻炒至牛肉全熟。


3: When beef is done like the picture above, add celery and mixing very well. Add soy sauce, ground peppercorn, vinegar and stir  for 3mins. Done!
3:当牛肉如上图全熟时,加入芹菜,酱油,醋,花椒粉翻炒3分钟。完工啦!

3 color chicken dice--chicken with edamame and carrots 三色鸡丁

Very nice color, white chicken+orange carrots+green edamame. This dish goes very well with rice. The second picture below is this dish mixing with rice ( brown and black rice). If you like spicy taste, try serve with Siracha sauce. The ingredients below is for 3-4 servings.
三色鸡丁样子好看,吃起来也绝不逊色。我比较喜欢拌入米饭吃。下面的第二张照片就是三色鸡丁拌饭(糙米和黑米)。如果你喜辣的话,加上点辣椒酱也很美味哦。以下的食材是3-4人份的量哦。



Ingredients: (3-4 serving size)
4.5 lb Chicken thighs chopped into dice, 280g frozen edamame, 1 carrots chopped into small dice, 1tbsp finely chopped ginger, 2 green onion chopped, 2 tbsp cooking wine, 1.5 tbsp low sodium soy sauce, 1tsp kosher salt, a pinch of sugar, 1/8 tsp ground white peppercorn, 2 tsp cooking oil
食材:3-4人份
4.5磅去骨鸡腿肉(约1800克)切丁,280克冷冻或新鲜去壳毛豆,1跟胡萝卜切小丁,1汤匙碎姜,2根葱切长段,2汤匙料酒,1.5汤匙减咸酱油,1茶匙kosher 盐 (如用普通盐请减至3/4茶匙),1/8茶匙白胡椒粉,2茶匙食用油



Instructions 步骤:
1: Heat up oil on medium-high. Add ginger and green onion to stir for 40 seconds. Add chicken and stir quickly for 40 seconds. Add carrots stirring frequently until chicken color turns white.
1:锅中热油。加入碎姜和葱段翻炒40秒。加入鸡肉快速翻炒40秒后加入胡萝卜,翻炒至鸡肉完全变白。




2: Add all the edamame when chicken turns to white. Reduce the heat to medium. Add cooking wine, salt, soy sauce, sugar stirring frequently for 40 seconds and cover the lid cooking for 3mins. Open the lid stirring for 10 seconds and cover the lid cooking for 3mins again. Add white ground peppercorn in the end and mix everything well. Time to eat.
2:当鸡肉变白色时,加入所有的毛豆。火调至中火。加入料酒,盐,酱油,糖后快速翻炒40秒,盖上锅盖后闷煮3分钟。再开该翻炒10秒后,加盖再闷煮3分钟。最后加入白胡椒粉,翻炒均匀后就可以开动咯。




Notes 窍门:  For eat with rice after "step 3", add 1-1.5 cup cooked rice into the pan. Mixing well by stirring frequently for 1min. Serve with Siracha chili sauce if you love spicy taste. 如果拌饭的话,就在步骤3后,加入1-1.5杯的熟米饭,翻炒1分钟婚后均匀后就可以啦。喜欢吃辣的亲们自动加辣酱哈。

White radish soup with beans and pork picnic shoulder 猪蹄膀杂豆萝卜汤

It took me so long to figure out a name of this part of pork. After google it for 20mins I guess "pork picnic shoulder is the suitable name. This part of pork is perfect for stew! Check the picture below and you will be more clear which part of pork I'm taking about. I love to eat the soup with a little bit dipping sauce for the pork on the side. In the "notes" section I will show you how to make the sauce. A perfect dish if you have "slow cooker". And finally we are going to use this very "useful home made chili oil" which I published a while ago, please check dish "Spicy mint cucumber salad", there are details about how to make the chili oil.

花了好长时间才搞清楚“猪蹄膀”的英文名字怎么说,百度了猪肉部位中文的对照图片,再到谷歌照图片对照着看这部分的英文,不容易啊我!pork picnic shoulder应该是各位卖肉大叔能理解的词汇了。蹄膀富含胶原蛋白,而且不腻,炖煮起来糯糯的。我习惯在吃时粘上自制的红油调料,那滋味让我现在边写都边流口水啊!还有就是,终于我们万能的自制红油要出场了,请参见“辣味薄荷叶拌黄瓜”里的辣油制作。



Ingredients: 1.5 lb pork shoulder picnic chopped into 1.5 inch chunk, 1/4 cup of mung beans or lentils instead, 1/2 cup blackeye beans or dried soy bean instead, 1 cup chopped green onion, salt, 5 slices of ginger, cooking oil, 8 cups of water (only 4-5 cups of water if you use "slow cooker"), 1.5 cup chopped white radish
Ingredients for dipping sauce: 1/2 tbsp home made chili oil (please check the dish "spicy mint cucumber salad", there has the detail of how to make chili oil), 1tbsp rice vinegar, 2 tbsp soy sauce, 1clove of garlic minced, a tiny pinch of sugar

食材:700克猪蹄膀肉切块,1/4杯绿豆或者用扁豆代替,1/2杯眉头或用黄豆代替, 1杯葱段,5片姜片,油,盐,8杯水(用慢煮锅只用4到5杯水),1.5杯切块白萝卜
蘸酱食材:1/2汤匙自家红油(请参照菜谱“辣味薄荷叶拌黄瓜”里的红油制作过程,非常详细),1茶匙米醋,1茶匙酱油,1瓣蒜切碎

Instructions 步骤:
1: Wash well the beans and soak in water. Heat up a little bit oil in a soup pot and add ginger, green onion to stirring quickly for 40 seconds. Add chopped pork picnic shoulder stirring quickly until the meat color turns to white.
1:将豆子洗净后泡入水中。锅内放少许油,放入香葱和姜片翻炒40分钟。再放入切好的蹄膀翻炒至肉变色。




2: Add water into the pot and turn the heat on high to make it boil, then reduce the heat to medium- low to cook for 30mins with the pot 80% covered with lid. There will be a little bit foam come out when it's boiling, please do take the foam off. 
For "slow cooker" user, please transfer everything into your slow cooker after it's boiling with the foam taken out and add all the beans, some salt (based on your taste)  cooking for 30mins.
2:锅中加水,大火煮开,转中小火慢炖30分钟,慢炖时加盖只留1拇指宽缝隙。期间水开后会有泡沫浮出,记住要去掉泡沫。
用“慢炖”锅的同学们,在水开后去掉泡沫,再将锅中左右转移到慢炖锅中,同时加入豆子,根据自己的口味加盐,慢炖30分钟。



3: Add salt based on your taste. Add beans and cooking for 20mins.
For "slow cooker" user, you can skip step 3.
3:根据自己口味加盐,加入所有豆子慢煮20分钟。
用“慢炖”锅的同学们,可以省略这一步了。

4: Add radish in and cook for 25mins. Serve with dipping sauce (see below).
For "slow cooker", add radish and cook for 15mins.
4:加入白萝卜,再煮25分钟。最后蘸着蘸酱吃。(蘸酱请见下面)。
用“慢炖锅”的同学,加入白萝卜后再慢煮15分钟。

Notes 技巧: how to make the dipping sauce for pork? 做猪肉蘸酱咯

1: 1 clove of garlic minced. Add 1 tbsp of rice vinegar soaking for 1min.
1:1瓣蒜切碎,加入1汤匙米醋泡1分钟。

2: Add 2 tbsp soy sauce, a pinch of sugar, 1/2 tbsp home made chili oil. Mix it up and it's done! Please check "Spicy mint cucumber salad" for chili oil making.
2:加入2汤匙酱油,1小撮糖,1/2自制红油,搅拌均匀就好啦。自制红油做法请参见”辣味薄荷叶拌黄瓜”,里面很详细的。

Tomato tofu meat ball soup 西红柿豆腐牛肉丸子汤

Dear all, please pay attention to the amount of the following ingredients, all the ingredients are for making 48-50 meat balls. So please adjust the ingredients proportionally according to your serving size.  The soup is so good, and I love to put rice in the soup.

亲的们,要注意下面的食材是做48-50个肉丸子的量,所以自己制作时要千万根据自己的食量按比例增减食材哈。这款汤特别美味,我超喜欢用来泡饭时。


Ingredients: 1lb ground beef, 1lb tofu (formed or medium formed, not the soft silk kind), 3 big tomatoes chopped, 1.5 tbsp starch, 8 tbsp low sodium soy sauce, 2tsp black sesame seeds, 1/2 tsp ground white pepper, 1tbsp olive oil, 2 eggs, 3/4 tsp kosher salt, 8 cups water, 6 big slices ginger, 1 cup chopped green onion

食材:1磅牛肉靡(约453克),1磅豆腐(非嫩豆腐,稍微老一点),3个大西红柿切块,1.5汤匙淀粉,8汤匙低盐酱油,2茶匙黑芝麻,1/2茶匙百胡椒粉,1汤匙橄榄油,3/4茶匙盐,8杯水,6片大姜片,1杯葱段


 Instructions 步骤:

1: Take tofu out of the package and let it set aside for 20mins to let the extra water come out from tofu.  Squeeze the tofu a little bit to let out the extra water.
1:将豆腐从包装中取出,放置20分钟,这可以让多余水份渗出。倒掉多余水份后将豆腐稍微挤压去掉多余水份

2: In a big bowl add beef, sesame seeds, starch, ground white pepper, low sodium soy sauce, 2 eggs and tofu. Mix everything very very well. Make the mixing tofu meat into balls.
2:将牛肉放入大碗中,加入黑芝麻,淀粉,百胡椒粉,低盐酱油,2只鸡蛋和豆腐。将所有碗中食材拌均匀后,做成丸子形状。

3: Heat up olive oil on medium in a big soup pot. Add ginger and green onion stirring for 30 seconds. Add 8 cups of water and turn the heat up to high. Add meat balls into the water when its boiling.
3:中火热油,放入姜片和葱段翻炒30秒后,加入8杯水。调至大火,当水开时放入肉丸。




4: When all the meat balls are floating in the water, add chopped tomatoes and salt. Reduce the heat to medium after everything in the pot is boiling and cook for 10mins white the pot 70% covered with lid.
4:当丸子都浮在汤上时,加入切块的西红柿和盐。大火煮开后,调至中火,盖上盖子(留30%的缝隙)煮10分钟。



Tips: Try to add some cooked rice in the soup. 试试汤泡饭吧。
