Organic drumsticks and blackeye beans with fresh orange sauce 鲜橙汁烧翅根

It's been a great experiment today! The oranges in grocery store look so yummy that I couldn't help to come up with this idea to bring fresh squeezed orange juice into a main course dish. In this dish I used blackeye beans and please make sure you soak or cook those beans long enough before you cook them with the chicken drumsticks. Of course you can use any kinds of bean instead blackeye beans --soy beans, black beans, fava beans and even green edamame are all good for this dish. I love spicy food, so I add a little bit chili powder into this dish but this is totally optional. One more thing, when the dish is done the mixed juice is splendid!
今天的实验非常成功。逛超市时发现现在的橙子真是又大又甜又多汁,不爱都难啊。于是便想了个法子加到菜中来。这道菜里我用了眉豆,亲的们根据自己家橱柜的存货可以用其它豆子代替,黄豆,黑豆,芸豆或者新鲜毛豆都是非常好的替代品,没有必要非用眉豆。我这人喜欢吃辣,所以加了点辣椒粉,这个是可选的,亲的们根据自己的喜好自己选择哈。再啰嗦一句,这道菜的菜汁简直太美味了!



Ingredients: 1/4 cup dried blackeye beans or other beans, 2 lb. organic fresh chicken drumsticks, 1tsp sesame oil, 1tsp regular oil, 3 tbsp soy sauce, 4 tbsp rice cooking wine, 1tbsp sugar, 1.5 cup fresh squeezed orange juice, 2 tsp meat seasoning (or use ground black peppercorn + a tiny pinch of sea salt + 1 tsp mustard), chili powder (optional), 1tsp black sesame seeds
食材:1/4杯干眉豆或其它豆类,900克鸡翅根,1茶匙芝麻油,1茶匙色拉油,3汤匙酱油,4汤匙料酒,1汤匙白糖,1.5杯新鲜榨取橙子汁,2茶匙腌肉香料(或用黑胡椒粉+一小小撮盐+1茶匙芥末),干辣椒粉(可选),1茶匙黑芝麻


Instructions 步骤:
1: Unless you use fresh or frozen beans like edamame any kind of dried beans have to be soaked. Soak blackeye beans in cold water for 30mins. Bring to boiling water to cooking for 15mins.
1:除非使用新鲜或冷冻的豆类,比如毛豆。其它任何干豆类都需要事先发泡过。将眉豆用水泡30分钟,再倒入沸水中煮15分钟。

2: Score both sides of the drumsticks with fork 4 times. Sprinkle some seasoning powder on the drumsticks and massage for 30 seconds. Set aside for 10mins. Here like I mentioned before, you can totally only use ground black peppercorn+a tiny pinch sea salt +spicy mustard instead of buying some new seasoning powder.
2:用叉子将翅根两面撮几下,可以更入味。 撒上腌肉香料,按摩30秒后放置10分钟代用。这里再啰嗦一下,大家不用专门买腌肉料,特别是国内的朋友。简单用黑胡椒粉+一丁点海盐+辣芥末(国内的朋友买不到辣芥末,可以不用),抹在翅根上一样美味。



3: Heat up sesame oil and regular cooking oil on medium-high. Add drumsticks and stir frequently for 2mins. Add beans, cooking wine, orange juice, sugar, soy sauce and stir very well until everything is mixed well. Reduce the heat to medium-low cooking with lid covered when it's boiling. Stir and scrap bottom and sides of pot occasionally, and flip both sides of the drumsticks occasionally (Made sure both sides of drumstick has chance to cook in the juice,  I turn sides every 2mins). Add some chili powder if you like.
3:中高火热芝麻油和色拉油。放入翅根翻炒2分钟。加入眉豆,料酒,鲜榨橙汁,糖,酱油迅速翻炒至混合均匀。大火烧开后转中低火加盖慢煮,每2分钟给翅根翻面,保证翅根两面都在汁水中闷过,并且偶尔翻炒保证锅底和锅边不粘。





4: When all the juice reduced to about 2 tbsp left with very thick texture (like in the picture blow), use knife having a small cut into the biggest drumstick to make sure it's cooked. If the meat in the cut is white then the dish is done. (If not, add a little bit more water and cook with lid a bit more ).
4:当汁水只剩下2大约2汤匙(见下图)时,用刀切开最大的翅根检查是否熟透,如果切面肉是白的,这道菜就算做完了。(如果肉没熟透,加点水再加盖闷煮一下)


Tips: There is nothing difficult, just make sure the chicken drumsticks are cooked. 
窍门:这道菜很简单,基本没有技巧。唯一注意的就是一定要保证鸡肉熟透了。

Rice with soy sauce pork & vegetable 酱油绍子杂蔬饭

Ground pork with soy sauce is a magic matching! You can simply just boil some soba noodles serving with green onion and this soy sauce pork on the top. Or make today's rice dish even with left-over rice! Both are super yummy. 15mins to finish with cooked rice. Sorry for no process pictures, my husband and I were so hungry so I made this very quickly.
四川话里“绍子”是指用酱油炒出来的肉末,糯香味浓。酱油猪肉绍子简直是万能的。懒散的时候白水煮面,撒上小葱,加入几勺酱油绍子,那是美味。或者做个肉绍子饭,即使是头天的剩饭,那也是无比美味。这到菜非常简单,做的时候饿慌了,快快做好就入口,也没多拍几张过程图,不好意思啦。

喜辣的人在上面撒了七味辣椒粉和越南辣椒酱

Ingredients: 1/2 cup corn kernels, 1.5 cups finely chopped green beans, 2.5 cups cooked rice (I tried 1/2 black rice and 1/2 brown rice), 1/2 cup finely chopped green onion, 0.4 lb. ground pork,  1 cup baby spinach, 4 tbsp soy sauce, 1tbsp cooking wine, 1/8 tsp ground white peppercorn, 1.5 tbsp oil, Siracha sauce (optional), chili powder (optional), 1 clove garlic minced.
食材:1/2 玉米仁,1.5杯切成颗状四季豆,2.5杯熟米饭(我用的是一半黑米一半糙米),1/2杯碎香葱,200克绞猪肉,1杯菠菜叶,4汤匙酱油,1汤匙米酒,1/8茶匙白胡椒粉,2汤匙油,辣椒酱和辣椒粉(可选),1瓣蒜切碎

Instructions 步骤:
1: Make soy sauce pork topping. Heat up 1/2 tbsp oil in a pan on medium-high. Add ground pork in stirring quickly and break up with  wooden spoon. Add all the soy sauce and cooking wine when the pork color changed. Cook on medium for 3mins and set aside in a bowl.
1:先做肉绍子。锅内中火热1/2汤匙油,加入绞猪肉快速炒散,并且用木绍子边炒边将块状肉分散。肉开始变色时加入所有酱油和米酒,翻炒3分钟后关火。放入碗中备用。

2: Heat up 1tbsp oil in a pan on medium. Add garlic, corn, green beans stirring frequently for 2mins. Add all the soy sauce pork into the pan stirring occasionally for 1minute. 
2:中火热1汤匙油。放入蒜,玉米和四季豆翻炒2分钟。加入碗中肉绍子再翻炒均匀1分钟。

3: Add all the rice stirring and breaking up with a wooden spoon for 1minute (add a little bit water if it's a bit dry). Add spinach, ground white peppercorn, chili powder (optional) and stir frequently until spinach is shrunk. Add more salt and Siracha sauce based on your taste. 
3:加入米饭炒散1分钟,最好散成粒状(如果太干则加入点水)。加入菠菜,白胡椒粉,辣椒粉(可选)快速翻炒至菠菜叶完全熟掉。根据自己口味添加盐和辣椒酱。

Tips: It tastes better if the cooked rice is a tiny bit dry, so the left-over rice from yesterday is the best or add a tiny bit less water when you cook the rice at the first place.
小窍门:熟米饭稍稍有点干最好,所以隔夜饭是最理想的。或者煮饭时稍微少放一点点水。
